Ajwain (Bishop’s Weed, Carom) — Trachyspermum ammi L. Sprague (syn. Carum copticum), Apiaceae (carrot/cumin family). Common names: Ajwain, Ajowan, Omam (Tamil), Vamu (Telugu), Oma (Kannada), Omam (Malayalam), Onva (Marathi), Jowan. Native to Egypt and the eastern Mediterranean; widely cultivated in India (Gujarat, Rajasthan), Iran, Afghanistan, Pakistan.

Product Description

An erect annual (sometimes short-lived perennial) herb, 30–90 cm (1–3 ft) tall, with a slender, branched, striated stem that becomes slightly woody at the base. Leaves are feathery and finely divided (2–3-pinnate), bright green, 2–6 cm long, with narrow, thread-like segments—soft to touch, aromatic when crushed (thyme-like). Inflorescence is a compound umbel (like carrot/cumin), 5–12 cm across, composed of many small white or pinkish flowers with 5 petals; blooms in late summer. The “seeds” used in cooking are actually small, ovoid schizocarps (dry fruits), 1.5–3 mm long, pale brown to grayish, ridged, strongly aromatic. They contain 2–5% essential oil, 45–55% of which is thymol (hence the thyme-like smell and antiseptic punch), plus γ-terpinene, p-cymene, α/β-pinene. Taste is sharp, pungent, slightly bitter—more intense than thyme.

Quick care (to grow for leaves/seeds): full sun (≥6 hrs). Warm 16–24 °C (60–75 °F) is ideal; tolerates 10–30 °C (50–86 °F). Not frost-hardy—treat as annual in cool zones; in tropics/subtropics it self-sows. Soil: light, well-drained loam or sandy loam, pH 6.5–7.5 (tolerates mildly alkaline and saline soils). Keep moderately moist during germination/early growth, then water deeply but infrequently; mature plants are somewhat drought-tolerant and dislike waterlogging (yellow leaves = overwatering). Sow seeds directly in early winter/early spring (after last frost) or start indoors; press seeds on the surface and cover thinly (light aids germination). Germinate in 7–14 days. Thin to 15–20 cm spacing. Feed sparingly—light compost at planting is enough; excess nitrogen reduces oil content. Pinch growing tips to encourage bushiness. Harvest leaves anytime; for seeds, allow umbels to mature—cut when fruits turn grayish-brown (about 2 months after flowering), dry in shade, and thresh. Watch for aphids and powdery mildew in humid conditions; good airflow helps. Uses: tadka/tempering for dal, paratha, bread, biscuits; digestive aid (carminative), relief for flatulence, cough, cold; thymol is used in mouthwashes and toothpaste for its antiseptic action.
